Hey guys! So, a few weeks ago I ran across a pasta recipe that looked delicious. I am not the biggest cook and I certainly cannot come up with a dish off the top of my head so I am always on the hunt for yummy recipes. I never planned to add recipes to the blog but oh well, it’s happening and I just hope you guys recreate it and enjoy it. Here is the link for the original recipe, I only tweaked it a little because I had to work with what I had.

For this recipe I used:

  • 6 slices of bacon
  • 5 chicken tenderloins (defrosted)
  • 1/2 diced onion
  • 4 cloves garlic, minced
  • 10 oz broccoli (I used frozen)
  • 2 cups chicken broth
  • 1 can (10 oz) diced tomatoes
  • 1 cup heavy cream
  • 8 oz penne pasta
  • salt and pepper to taste
  • 1 cup (or more) cheddar cheese, shredded

Directions:

Start by cutting the chicken and the bacon into bite size pieces.

In a large skillet (I used a 12 inch with high sides) add your bacon.  DSCN1087

cook over medium-high heat, until crispy, about 5-7 minutes.DSCN1091

Meanwhile, cut your chicken into bite size pieces, season with salt & pepper to taste.DSCN1093

When your bacon is done, transfer it to a plate. I removed some bacon fat for later use and left about 1 tbsp in the pan. Now place your chicken in  the pan in a single layer, cook until golden brown. DSCN1100

Remove the chicken when done and put it in the plate with the bacon.DSCN1109

Add an extra tbsp of the bacon fat that was set aside for later use on to the pan. Add the diced onions to the pan and cook until golden brown, then add your garlic and cook for about 1 minute.DSCN1102

Add the broccoli, stir and cook for about 30 seconds until everything is well mixed.DSCN1107

Remove the veggies to a separate plate.DSCN1110

Place your pan back on to the stove top and add the chicken broth, cream, tomatoes, uncooked pasta, salt and pepper to taste. Give it a quick stir and bring to a boil, cover, and turn down to a simmer for 15 minutes.DSCN1108

Once the pasta is tender and the sauce is thickened add the cheese and stir.DSCN1113

Turn the heat off and add the chicken, bacon, and veggies to the pan. DSCN1116

I hope you guys recreate this yummy pasta goodness and fall in love like we did. It’s not the healthiest meal with all the pasta and cheese but that’s overlooked when you try it.
